Mustard (Japanese: マスタード Mustard) is a character in The Isle of Armor in Pokémon Sword and Shield. He is a former Champion of the Galar region. He is the only character in the games to have the Trainer class Dojo Master (Japanese: どうじょうぬし Dojo Master).
In the core series games
In the past, Mustard used to be a Fighting-type Gym Leader. He became the Galar League Champion soon after a heated battle with Opal about 50 years prior to the events of Sword and Shield, a position which he managed to hold for 18 years, longer than any other League Champion before or since. He only lost the title after his prowess in battle began to wane following the death of his partner Pokémon. After refusing a suggestion by the then chairman of the Galar Pokémon League to have a match rigged in his favor, Mustard retired from the Galar League entirely and traveled around the world, until he bought an unnamed island off the coast of Galar and named it the Isle of Armor, setting up his Master Dojo there to teach people about Pokémon battles. One of his students was Leon, who would go on to become a Champion himself one day as well, despite failing to finish Mustard's training due to his horrible sense of direction preventing him from finding the Towers of Two Fists.
Upon arriving at the Master Dojo, Mustard accepts the player as his student and has an easy battle with them. He then puts all of his students through three trials, with the player ending up as the winner and earning a Kubfu as a gift from Mustard. After befriending Kubfu, the player must evolve it at either the Tower of Darkness or the Tower of Waters, depending on their choice, with Mustard acting as the final opponent before Kubfu can evolve into Urshifu. Once the player has successfully found a way to unlock Urshifu's Gigantamax potential, Mustard will challenge the player to one more battle, where he holds nothing back. After this battle, he can be challenged to a rematch once a day if the player talks to him while he plays Pokémon Quest in the Master Dojo.

His intense drive for strength meant he insisted on discipline, both in himself and in others. His character changed drastically, however, after his post-retirement globe-trotting. His sudden purchase of a deserted island added to the surprise of those around him. When asked for his reasoning, he answered with a smile, "There are lots of ways to be strong in this world. I want to see them all!" The name "Isle of Armor" was also his idea."

- "This photo was taken about 50 years ago, when Mustard defeated the Fairy-type Gym Leader and went on to become Champion. He reigned undefeated until he lost his partner Pokémon. Mustard developed an obsession with video games after his retirement. Apparently he held off while he was still active in order to maintain his image to his fans."

In animation
Pokémon: Twilight Wings
Mustard appeared in The Gathering of Stars, where he was seen in the Master Dojo at the Isle of Armor. He was visited by his student Leon, who gave him an invitation letter for the Galarian Star Tournament after having a quick battle with him. He was later seen at Wyndon Stadium, walking out onto the field for the tournament's opening ceremony.

Mienshao was used in a battle against Leon's Charizard. Despite the type disadvantage, Mienshao managed to fight on equal terms against the opponent before the battle was called off. It is housed in an Ultra Ball.

Pokémon Adventures
Mustard debuted in Flutter!! Tickets to a New Land. While training, Klara and Avery found an unconscious Henry Sword suffering from the effects of Eternatus's poison. Henry was taken to the Master Dojo to recover and was given permission to stay as long as he wanted. Klara went off to greet a pair of new arrivals at the Armor Station, but returned with Casey and Marvin, who quickly clarified that they were just looking for Henry. While the three stayed on the island, Mustard lent Henry his Kubfu, hoping that traveling around would help Kubfu see the world and overcome its shyness.
In PASS35, while searching for the Rusted Sword and Shield, Henry, Casey, and Marvin arrived at the Tower of Darkness. A Master Dojo Student guarding the entrance barred the three from investigating the building unless Henry and Kubfu defeated her in a one-on-one battle first. Although he believed they weren't ready yet, Mustard allowed Henry and Kubfu to battle the student, but despite its best efforts, Kubfu was unable to win. Later that night, Kubfu went to search the tower by itself, only to be taken out by an unseen Pokémon.
In PASS36, after several days of training, Kubfu decided to instead train at the Tower of Waters. Henry and Kubfu battled through multiple floors until they reached the top, where Mustard and his Single Strike Style Urshifu were waiting. Urshifu proved to be a powerful opponent, but by targeting its feet, Kubfu forced Urshifu to stumble, leaving wide open to be defeated by a powerful Close Combat. Mustard allowed Kubfu to examine the Scroll of Waters, causing it to evolve into a Rapid Strike Style Urshifu. With their training complete, Mustard suggested Henry permanently keep Urshifu on his team, which he accepted.

Urshifu is Mustard's second known Pokémon. It was first seen preventing Casey and later Kubfu from investigating the Tower of Darkness. Later, Mustard used it to battle Henry's Kubfu at the Tower of Waters. Although its opponent was much stronger, Kubfu eventually won by forcing Urshifu to stumble, leaving it wide open to receive a supereffective Close Combat.
Urshifu's only known move is Wicked Blow.

Urshifu is Mustard's first known Pokémon. It was the "secret armor" of the Master Dojo, and was given to Trainers who completed the dojo's three trials. Despite this, Mustard decided to let Kubfu see the world alongside Casey, but she rejected the offer as she already had a full team. Mustard then allowed it to walk with Henry instead. In PASS37, after defeating Mustard's Urshifu, it evolved into a Rapid Strike Style and officially joined Henry's team.
