In the anime
In the main series
While not mentioned by name, in The Guardian's Challenge, it is revealed that Kiawe completed Olivia's grand trial and received a Z-Ring from her prior to the start of Pokémon the Series: Sun & Moon.
She partially appeared in Young Kiawe Had a Farm! during a flashback, when Kiawe told Ash that the Z-Ring and Firium Z he had received from Olivia was his grandfather's. She was also mentioned in A Glaring Rivalry! when Gladion revealed that he obtained his Rockium Z from completing her grand trial.
Olivia physically debuted in The Island Whisperer!, where she traveled to Melemele Island and visited the Pokémon School, taking Ash and his classmates to visit Akala Island. She continued to appear during throughout Ash and his classmates' stay on the island, first in Treasure Hunt, Akala Style!, where she organized a class involving treasure hunting using Stoutland Search. During the treasure hunt, Lana found a Sparkling Stone, which Olivia took to be converted into a Z-Ring. The finished Z-Ring was returned to Lana in the next episode.
In Currying Favor and Flavor!, Olivia sent Ash and his classmates on a search for ingredients for the famous "Akala Curry". Ash was paired up with Mallow, with their search eventually leading them to Lush Jungle, where Ash was challenged by Totem Lurantis. After Ash defeated Lurantis, Olivia showed up and revealed that the entire search had actually been a part of Ash's trial, and he now qualified to take on her grand trial.
In Trials and Determinations!, she battled Ash in his Akala Island grand trial at the Ruins of Life, using Lycanroc and Probopass in a Double Battle against Rowlet and Rockruff. Despite their two opponents giving them a lot of trouble, Rowlet finally managed to defeat Probopass with Bloom Doom, only for Rockruff to impulsively attack and knock out Rowlet out of its desire to battle Lycanroc alone. Despite this setback, Rockruff was still able to defeat its evolved form, winning the battle for Ash. After the battle, Olivia gave Ash a Rockium Z and told him that Rockruff's behavior was a sign of it being ready to evolve soon.
In The Professors' New Adventure!, Olivia attended the wedding of Professor Kukui and Professor Burnet.
She reappeared in flashbacks in Some Kind of Laziness! and Not Caving Under Pressure!.
In Full Moon and Many Arms!, Olivia was seen praying at the Ruins of Life while she waited for the Manalo Festival to begin. In Securing the Future!, she joined the rest of Alola in restoring Necrozma to its true form by lending it some of her Z-Power.
In Heart of Fire! Heart of Stone!, Olivia met up with Ash and his classmates again when they visited Akala alongside Brock and Misty, who were visiting Alola. Brock became infatuated with her, resulting in Misty dragging him away. She agreed to a battle and used Lycanroc against Sudowoodo but the battle was interrupted by Team Rocket who attempted to steal the Pokémon. Brock and Olivia avoided capture and teamed up to attack Team Rocket with a heart shaped Continental Crush.
In The Dealer of Destruction!, Olivia, her fellow Kahunas, and Lusamine helped Professor Kukui reveal the Alola League to the public.
In A Recipe for Success!, Olivia was visiting Aina's Kitchen when Abe asked Mallow to collect some ingredients from Oranguru. Mallow was gone for a while helping out at the Café, so Olivia started helping Abe at the Kitchen and was later joined by Ash and the rest of his classmates. Olivia later watched as Mallow returned with a Grassium Z given by Tapu Koko, and a Z-Ring given by Oranguru. She then cleaned and decorated the Z-Ring before giving it back to Mallow for her to use.
In Battle Royal 151!, Olivia appeared alongside her fellow Kahunas, acting as a referee during the Battle Royal preliminary round of the Manalo Conference. In Battling Besties!, Olivia refereed the second pair of first-round matches: one between Hau and Samson Oak, and the other between Mallow and Lana. From Imitation Is the Sincerest Form of Strategy! to The Road to The Semifinals!, she continued observing the Manalo Conference battles. She then refereed the semifinals battle between Kiawe and Gladion in The Final Four! and Getting Down to The Ire!. Afterwards, in Final Rivals! and Enter the Champion!, she watched the finals battle between Ash and Gladion in the stands. After the final battle ended, Olivia attended the award ceremony for the winner, only for it to be interrupted when a Guzzlord arrived at the stadium through an Ultra Wormhole.
In Z-Move Showdown!, Olivia and the other Island Kahunas joined forces to battle Guzzlord. The guardian deities later came to their assistance, using their powers to keep Guzzlord in place long enough for Olivia and the others to fire off their Z-Moves. The combined attacks launched Guzzlord back into the wormhole it came out of, successfully sending it back into Ultra Space.
In Exhibition Unmasked!, Fiery Surprises!, and From Z to Shining Z!, Olivia watched the exhibition match between Ash and Professor Kukui.
In Dreams of the Sun and Moon!, Olivia acted as the referee during Ash's battle against Kiawe. After the battle, Olivia spoke with Ash and motivated him to travel around the world.
Character
Olivia is highly energetic and sweet by nature. However she is also very clumsy, constantly getting knocked to the ground during simple tasks like walking up the stairs or opening a door. She also possesses the unique ability to communicate with Pokémon on a different level than most people, giving her a natural affinity even with highly guarded and aggressive Pokémon such as Kiawe's Turtonator and Ash's Litten.

Olivia briefly appeared in GOTCHA!.
In the manga
In the Pokémon Adventures manga
Olivia debuted in The Delivery of Rotom and the Girl. She was first seen with Hala and Nanu at Malie Garden, where they discussed the sightings of the guardian deities around Alola. They speculated that the normally reclusive guardians appearing before people was a sign that they were angered by something.
In Pokémon Move Specialist Professor Kukui, Olivia and Nanu battled each other to test a stage for an upcoming festival in Iki Town. Nanu teased Olivia about her romance troubles, which angered her into using a Z-Move. Nanu tried retaliating with his own, but both were stopped by Hala. The three decided the festival would be used to test Alolan youths by having they battle each other. The strongest participants would travel around Alola's four islands, imitating the island challenge, in order to calm the guardian deities' rage.
In The Decision and the Tournament of Six, Moon helped Olivia determine the festival tournament roster. At one point, they encountered Lillie, a girl entered in the tournament due to a misunderstanding. When Lillie tried to explain the situation, Nebby escaped from her bag and ran off. Moon and Lillie chased after Nebby to Mahalo Trail while Olivia went to tell inform Hala. After returning, Olivia witnessed Tapu Koko rescuing Moon and Nebby from falling in the water before leaving. Olivia offered to have Lillie withdrawn from the tournament, but Moon decided to take her place instead.
In Thieving and Boss Crabominable, Olivia, Hala, and Nanu met at Hala's house, where they decided to name Hapu the next Kahuna of Poni Island. Olivia and Nanu decided to head to their respective islands to help the Trial Captains fend off the Ultra Beasts that appeared in Alola. Before they could leave, a Kartana and Buzzwole burst into the building and attacked. Hala decided to fight the two beasts alone and told Olivia and Nanu to go defend their islands.
In PASM26, the Island Kahunas and Trial Captains were revealed to have spent six months on Exeggutor Island training to prepare for another clash with the Ultra Beasts. At some point, Olivia made a Z-Ring for Hau. Once the training was finished, Olivia and Kahili left to join the others and deliver a repaired Z-Ring Kiawe. While they traveled, Kahili revealed a suitcase full of Z-Crystals she had spent the last six months gathering. One of the Z-Crystals was a Lycanium Z, which Olivia had never seen before.
After meeting with the others, Sophocles and Molayne took everyone to Mount Lanakila, where a wormhole had opened up earlier. Shortly after they arrived, their ship was attacked by a group of Aether Foundation Employees and their Ultra Beasts. During the battle, Olivia was assisted by Tapu Koko, who transported her to Melemele Island in order to battle with Guzzlord.
