Turn on the Game Boy, and let's get started!  Press A or START at the title screen to access the main menu.
After a brief cutscene, press the A Button or Start on the title screen to reach the main menu. Option may be used to change settings like Text Speed. Select New Game and press the A Button. The resident researcher of the Kanto region, Professor Oak, appears and introduces new Trainers to the Pokémon world. Next, the player is prompted to select their character's name from a list of preset options.
You will see two options, New Game and Option.

Selecting Option will show three topics.  You don't need to change them, but it's a good idea to set the Text Speed to Fast. Select New Game and press A. All of a sudden, Professor Oak appears!  He welcomes you and gives you a brief insight into the world of Pokémon.

If you don't want any of the default names, select New Name and press A. On this screen, just move the cursor around to highlight the letter you want, and press A to select it (up to seven characters). To remove the last letter entered, press B.  Once you're done entering your name, select ED in the bottom-right corner.
To use a different name, move the cursor to New Name and press the A Button. On this screen, pressing the A Button will select a letter while pressing the B Button will delete the previous one. A custom name may be up to seven characters long. When ready, press Start or select End in the bottom-right corner.

Now you need to choose a name for your rival, Oak's grandson.
Next, Professor Oak introduces Blue, who happens to be your rival. The professor is having trouble remembering the boy's name, and asks if you might know. Choose his name from a different list of preset names, or select a new one. With that done, the player is transported into the world of Pokémon to begin their adventure!

Like with your own name, you have the option of giving your rival any name that you wish. When you are finished, you'll wake up in your bedroom.
The journey begins in Pallet Town, in the southwest part of the Kanto region. It is a rather small, sleepy town with only three buildings. The western house belongs to you and Mom, while the eastern one is home to Blue and his sister. The large building to the south is Professor Oak's Laboratory. The north part of town leads to the tall grasses of 1, and the waters to the south open up to 21.

You start the game in your bedroom, standing in front of your Super Nintendo Entertainment System.  Now, a quick recap on the controls:

:* D-Pad (Arrows) - These four buttons will move your character around, and also move the cursor around when in a menu.
Home
:* A Button - This is the game's all-purpose "do" button. It lets you talk to people, push buttons, inspect something, etc.

:* B Button - Cancels selections and lets you exit menus.
The journey begins in your bedroom, with you standing in front of your Super Nintendo Entertainment System. Now that you can control your character, the various buttons and their effects are as follows:
:* START - The Start button will open the in-game menu.

Before you leave, check your PC in the corner for any useful items.  Stand in front of it and press A.

Your PC is your item-storage system. You can only hold 20 different items in your backpack, so you may have to store some in your PC at some point to make room. The system is pretty simple:

Your PC already holds an item, a Potion. Highlight Withdraw Item and select Potion x1.  You'll be asked how many to withdraw, but since there's only one, you can just press A.  Hit the B button a few times to back out of the menus, and you'll be back in your bedroom.
<br>
It is probably a good idea to save your game now, so with nothing selected, press START.  Most of the subjects here are self-explanatory.  Select Save, the game will ask you if you are sure you want to save, select Yes.  Once it is done saving and the menu has disappeared, the game is saved.  You could then turn off the Game Boy and pick up from this point later on.
<br><br>
Enough of this, let's go downstairs. Walk on top of the stairs in the top right corner of the room, and you'll wind up on the first floor. <br> Downstairs, you'll see your Mom sitting at the table. Talk to her, and she'll say that Professor Oak has been looking for you.

To leave your house, step on the mat along the south wall, and press the down arrow. Welcome to Pallet Town!
The PC in the corner acts as your PC. Since your Bag can only hold 20 different items, it would be necessary to use or discard some before obtaining anything new. The PC can hold up to 50 different items. Deposit Item and Withdraw Item allow for moving items between inventory and storage, while Toss Item discards an item permanently. It seems as though there is already an item in storage, so select Withdraw Item and choose the Potion to add it to your Bag. Press the B Button to close the menus and return to your bedroom. To save the game, press Start to open the main menu, select Save, and then Yes. When the menu disappears, your progress is saved and it is safe to exit the game.

Pallet Town is a rather boring, quaint town, with only three houses.  The house to the west is yours, the one to the east is your rival's house, and the big building to the south is Professor Oak's lab. You can walk all around town and talk to everyone, but Oak is nowhere to be found.  Looks like there's nothing else to do but leave town, so walk into the tall grass north of the town...
1F
Mom is sitting at the table, and tells you that Professor Oak has been looking for you. To leave the house, step on the floor mat along the south wall and press down on the +Control Pad.

From out of nowhere, Oak appears! He yells at you for trying to leave by yourself, without a Pokémon of your own for defense against the wild Pokémon roaming around. He has perfect timing, because a wild Pikachu jumps out of the grass at that very moment. Oak throws a single Poké Ball and catches the electric mouse.  He drags you back to the lab, and offers you the Pokémon sitting in the Poké Ball on his table, but your rival snatches it away from you.  Instead, Oak gives you the freshly-caught Pikachu. This Pokémon will remain a Pikachu, as it cannot evolve in Pokémon Yellow. On your way out, your rival challenges you to your first battle.
Oak Appears!
Pallet Town has only a few places to explore, and Professor Oak is nowhere to be found. There is nothing else to do around here right now, so head for the tall grass on the north side of town. Suddenly, the professor appears! He scolds you for trying to venture off on your own, as it can be dangerous without a Pokémon of your own for defense against wild Pokémon. The professor's timing is impeccable, as a wild Pikachu attacks at this very moment. Oak throws a single Poké Ball and catches the Electric Pokémon.

Professor Oak's Lab
Oak leads you back to his lab where Blue is already waiting, and offers you the creature in the Poké Ball on the table as your very first Pokémon. Before you can make a move, Blue snatches it away from you, and the professor entrusts you with his newly-caught Pikachu instead. Although Pikachu are capable of evolving, this particular Pikachu will always refuse to do so.

Rival Battle 1
When battling, each Trainer sends out one Pokémon at a time; both of these particular Pokémon are on Level 5, indicated by the :L5 aside each Pokémon. Below that is the health bar, which shows the Pokémon's remaining HP. A battle is won or lost when either side has no remaining Pokémon with the strength to continue.

Choosing Fight will allow you to launch an attack against the target. Both Pikachu and Eevee have two moves. The first will damage the opponent, and the other will lower one of its stats. If your Pokémon's HP runs low, be sure to use that Potion from your PC. Go to Item to select the medicine and apply it to the Pokémon. It is important to note that the outcome of the first two battles with your rival will determine the evolved form that his Eevee ends up taking.

After the battle, your rival will run off, and your new Pikachu jumps out of its Poké Ball. Oak says that you should just let it follow behind you to make it happy. Pikachu had been fully healed after the battle, so you are all set to leave your hometown.

This is the Bulbapedia walkthrough for Pokémon Yellow.
These pages follow the original Game Boy iteration, not Pokémon: Let's Go, Pikachu! and Let's Go, Eevee!. The guide for those games can be found here.

Introduction

Name selection

After a brief cutscene, press the A Button or Start on the title screen to reach the main menu. Option may be used to change settings like Text Speed. Select New Game and press the A Button. The resident researcher of the Kanto region, Professor Oak, appears and introduces new Trainers to the Pokémon world. Next, the player is prompted to select their character's name from a list of preset options.

Default Names
Player Yellow, Ash, Jack
Rival Blue, Gary, John

To use a different name, move the cursor to New Name and press the A Button. On this screen, pressing the A Button will select a letter while pressing the B Button will delete the previous one. A custom name may be up to seven characters long. When ready, press Start or select End in the bottom-right corner.

Next, Professor Oak introduces his grandson, who happens to be your rival. The professor is having trouble remembering the boy's name, and asks if you might know. Choose his name from a different list of preset names, or select a new one. With that done, the player is transported into the world of Pokémon to begin their adventure!
