How sure are you that the 'don' part of Gastrodon's name comes from the Spanish honorific? I feel like it's more likely that the name comes from Gastrodonta, a genus of land snails. Does Gastrodon have 3 eyes, thought it was just 2, like the majority of pokemon except Staryu, Starmie, Dusclops, Dusknoir etc... In the case of Doduo, Dodrio and Dugtrio, they have 2 eyes to each head?
